Although his grandfather started from scratch, Philippe made the big switch to biodynamics in 1992. A pioneer of wines with little or no added sulfur, Philippe likes very long aging processes with patience and non-intervention as his guiding principles.
Surface soil cultivation and natural grass cover are some basic principles that allow the roots of the vine to coexist in diversity, and to draw mineral elements from deep within their terroir.
Advocates of long aging periods of at least 36 months, including a minimum of 24 months in barrels , they allow this slow process to unfold at its own pace in order to better refine the material and microbiologically stabilize the wines.
The house style is characterized by a rich texture, concentrated by small yields and marked by vibrant and mouthwatering finishes!
For his exceptional vintage, Clos de Monsieur Noly , the aging process reaches 10 years! Philippe recommends waiting at least another 10 years in the bottle for the wine!
During our tastings, we enjoyed rediscovering wines we know well. They caught our attention for their aromatic precision, purity and tension, particularly in these vintages: Mâcon Chaintré Vieilles Vignes 2019 and Pouilly Fuissé 2017 .
