Since their beginnings in 2014, Marine and Quentin have deployed tremendous energy to leave the cooperative and create their own estate , with a clear, precise, and deeply assertive style.

Domaine Vincey now covers 7 hectares , in the heart of the Côte des Blancs , including 5 in massal selection in the communes of Oger, Le Mesnil-sur-Oger and Chouilly , all classified as Grand Cru .
10 km from Oger , at the Château de Renneville , Marine and Quentin have set up their nature base - a living ecosystem conceived as an extension of the vineyard.

This is where they pick horsetail and comfrey , prepare herbal teas and decoctions to treat the vines, develop their green manure , and house the sheep that participate in maintaining the soil.

The grapes are harvested at full maturity , by hand, in small crates to preserve the integrity of the berries.

The traditional Coquard wooden press delicately extracts the clear juices, before they descend into the cellar by gravity .

Indigenous yeasts spontaneously trigger fermentations, and each plot is vinified separately to respect its uniqueness.

The wines are then aged on lees in local oak barrels , sourced from forests located within a 200 km radius.

Each year, 20% of the barrels are replaced with new ones.

The secondary fermentation takes place under natural cork , and both riddling and disgorging are done by hand.

The single-vineyard wines rest for 36 months on lees before being disgorged without dosage.

The 2021 vintage was demanding – marked by cool temperatures and periods of rain. But wasn't that the climate before global warming? A vintage of balance and tension, with good aging potential, between aromatic complexity and mineral freshness.
