In Boursault, in the Marne Valley, the hillsides face the forest before descending towards the river. The soils, a mix of chalk, clay, and silt, give the wines a rich body, always sustained by a singular freshness.
It is here that Aurélien Lemaire gradually took over the family estate, before fully managing it in 2019. He quickly initiated a profound transformation of the vineyard. Green manures replaced inputs, soils are worked with care, and trees are reintroduced into the heart of the plots. Each intervention seeks less to correct nature than to restore its capacity for expression.
The same philosophy guides the work in the cellar. Fermentations are carried out by indigenous yeasts, aging primarily takes place in wood, and curiosity leads Aurélien to explore new avenues, such as the use of a Georgian qvevri buried near the winery. Experimentation is never an end in itself: it accompanies a permanent quest for balance and precision.
His Champagnes naturally reflect this approach. Wines that are both free and rigorous, where the body expresses itself without heaviness, where textures take time to reveal themselves, and where each cuvée primarily tells the story of its origin.
