Collection: Wolf Paws Estate

Thomas Pico created the estate in 2005, taking over part of the family vineyards and also cultivating new plots. From the outset, he focused on organic and biodynamic practices, obtaining organic certification in 2009.

The estate covers approximately 15 hectares, primarily located in the Chablis, Chablis Premier Cru (such as Côte de Jouan and Beauregard), and Chablis Grand Cru appellations. The vines are planted in soils typical of Chablis, composed of marl and Kimmeridgian limestone, giving the wines a distinctive minerality and aromatic complexity.

Thomas Pico uses winemaking methods that promote the natural expression of the grapes and the terroir. The harvest is done by hand, and the grapes are fermented with indigenous yeasts. He favors extended aging on fine lees, often in stainless steel tanks or old oak barrels, to preserve the purity of aromas and the structure of the wines without excessive oak influence.

The Pattes Loup estate embodies a modern and respectful vision of traditional Chablis viticulture, producing wines that faithfully reflect the unique character of their terroir.
