Olivier Chéreau, sommelier consultant, organizer of the Savoyard trade fair Jour Fruit in Savoie, moved to the production side in 2021, creating his own estate.
The estate, created from scratch and located in Savièse (Sion/Central Valais), covers an area of ​​one hectare, between 750 and 800 meters above sea level, on limestone and schist soil. The vines are cultivated with respect for living organisms.
Elaïa means swallow in Basque. This is a vintage to celebrate the arrival of his goddaughter Elaïa. The Savagnin grapes come from Savièse, the Chasselas grapes from the commune of Conthey, and the Sylvaner grapes from Ayent.
Slow and gentle direct pressing followed by fermentation and aging in stoneware amphorae. The shape of the amphora naturally induced autolysis in the blend.
