Collection: Domaine Payen

In Chaudefonds-sur-Layon, the Anjou Noir reveals one of its most fascinating expressions. Shales here rub shoulders with rhyolites and ancient volcanic rocks, remnants of a unique geological history in the Loire region. These poor and rugged soils, shaped by the Layon river, offer Chenin a remarkably intense terroir.

It is in this landscape that Ludovic Payen took over a 28-hectare estate in 2023. His journey led him to two benchmarks of the French vineyard: Coulée de Serrant, where he discovered the demanding nature of the great Loire terroirs, then Domaine du Comte Liger-Belair, in Burgundy, where he refined his understanding of parcel-by-parcel work and precise aging techniques.

Back in Anjou, he continued the organic conversion initiated on the estate and undertook extensive work, both in the vineyard and in the cellar. The soils are worked, harvests are carried out at optimal ripeness, fermentations are conducted with indigenous yeasts, and interventions are reduced to the strict minimum to preserve the identity of each parcel.

The first vintages already show a promising signature. Precise, luminous wines that prioritize balance over a display of power. The textures remain fine, sculpted, and each cuvée carries that mineral energy that makes the great Chenins of Anjou Noir so unique.

An estate in full rebirth, driven by an ambitious vision and one of the most promising young winemakers of the new Loire generation.
