Cabaret des Oiseaux resonates as an allegory: that of the fragile and precious link between the nourishing earth and life, free, ethereal, suspended by a thread. A thread of balance and time, stretched between peasant humility and poetic inspiration.

Since 2016, Jude and Lucile Spaety have settled in Saint-Lothain , a stone's throw from Poligny, in the heart of the Jura. They live there as a family, surrounded by their vineyards, in a landscape that commands respect and demands attention.

Their two hectares of vines are cultivated using natural methods, without machinery and without compromising on any other intervention. The vines are tended like a garden , with horses , hands , and careful observation . Their sole priority is to respect living things, not to rush nature, and to let time take its course.

Their approach, characterized by discretion and precision, is naturally reflected in their wines. Wines of tension, purity, and emotion.

The materials vibrate, letting the soil, the vintage, the yeasts speak.

In their youth, autolysis brings that extra something, a subtly saline texture, aromas in constant motion, never fixed, always nuanced.
