Collection: François Rousset Martin

For François Rousset-Martin, wine is first and foremost a matter of time.

Originally from Burgundy, he settled in Nevy-sur-Seille in 2007, at the foot of Château-Chalon, where he now cultivates about ten hectares spread across the greatest terroirs of Côtes du Jura and Château-Chalon.

His approach is unique. François Rousset-Martin does not seek to deliver a wine quickly. He waits for it to come into being. The aging process often stretches over five, six, sometimes seven years. This long period is never a technical demonstration: it allows the wine to naturally find its balance, to gain depth without losing its energy.

Savagnin naturally holds a central place at the estate. Vinified both ouillé (topped up) and sous voile (under flor), in his hands it becomes a formidable interpreter of the Jura marls. Each plot has its own identity, each cuvée tells a story of soil, exposure, and a different aging rhythm.

The wines are striking in their precision. Behind a full body always lies a line of freshness, an almost mineral tension, and that saline depth which constitutes the true signature of the estate. The aromas reveal themselves in layers, slowly, as the wine opens, never seeking an immediate effect.

François Rousset-Martin today produces some of the most accomplished Savagnins of the Jura. Demanding, patient wines that remind us that great bottles are not only a matter of terroir, but also of time.
