Collection: Wine vs. Wild
Over the years, Olivier Chéreau has established himself as one of the key figures in natural wines in Savoie. A consulting sommelier, educator, and creator of the Jour Fruit fair, he has long supported winemakers who push boundaries. In 2021, he decided to take the plunge and create his own winery: Wine Vs Wild.
His vineyard, planted in Savièse, in the heart of central Valais, spans just one hectare, between 750 and 800 meters above sea level. On these limestone and schist slopes, Olivier primarily seeks freshness and the expression of the terroir. The vines are cultivated with respect for life and minimal intervention, while winemaking favors natural fermentations and long aging, mainly in amphorae, to preserve the energy and precision of the wines.
Wine Vs Wild's cuvées have an immediately recognizable identity: luminous and taut mountain wines, where the texture remains delicate, supported by a beautiful salinity and a permanent sensation of movement. A contemporary interpretation of Valais, guided more by finesse than by power.
