Collection: Domaine de l'Enclos
The Domaine de l'Enclos comprises 29 hectares of vineyards, of which 6 hectares are certified organic and 23 hectares are in organic conversion. The vines are located across all four Chablis appellation levels, including some of the finest terroirs in the region. The estate is situated in the heart of Chablis on a large property, the former residence of the monks of Pontigny Abbey, comprising a large 19th-century building and a partially underground winery built in 2016.
The estate places great importance on soil health, which is maintained through tilling and sowing. To preventatively protect the vines from disease, natural products such as copper, sulfur, and plant preparations are used.
2016 was the first vintage vinified at Domaine de l'Enclos, in the new gravity-flow winery. The grapes were harvested at optimal ripeness (between 12.3 and 13.5% natural alcohol), sorted on a vibrating table, and pressed in the latest generation of pneumatic presses. All grape reception and juice transfer operations are carried out by gravity. The juice flows into stainless steel tanks installed in a 450 m² underground cellar. Each plot is vinified separately.
