Elaïa was created to celebrate the arrival of Olivier Chéreau's goddaughter, whose Basque name it bears, meaning "swallow". A luminous cuvée, conceived as a wine for sharing, blending three terroirs from Valais to create a balance as singular as it is obvious.

The Savagnin from Savièse brings its tension and depth, the Chasselas from Conthey its delicacy, while the Sylvaner from Ayent prolongs the wine with a floral and saline freshness. The pressing is slow and delicate, followed by fermentation and aging entirely in stoneware amphorae. The shape of the vessel naturally promotes the work of the lees, giving the wine an enveloping texture without diminishing its energy.

On tasting, Elaïa captivates with its balance between precision and gourmandise. Ripe citrus fruits, white flowers, alpine herbs and a fine stony note stretch out in a saline, slender and particularly digestible palate. A mountain white with a strong personality, where the aging accompanies the wine without ever overpowering it.
