François Rousset-Martin does not make Macvin to cut corners.

The Chardonnay must, fortified with Jura marc, spends five years in barrels. This unusual duration concentrates the wine as much as it reshapes its contours. The fresh fruit recedes, giving way to bitter orange, candied apricot, dried fruits, dark honey, and spices.

But a 5-year aging period is never solely about richness. An herbaceous, almost medicinal, thread runs through the material, giving it striking relief. Sweetness collides with bitterness, power with a citrusy freshness that keeps the wine in motion. Some may even find something reminiscent of Chartreuse: that singular alliance of herbs, warmth, and persistence.

Five years in barrels has therefore not made this Macvin more docile. It has given it a stronger voice. An intense, deeply Jura liqueur wine, whose sweetness is never a destination, but the starting point for a much wilder tasting experience.
