Collection: Thomas Pico
For a long time, Chablis was defined by its freshness, precision, and straightforwardness. Thomas Pico added another dimension: texture.
When he founded Pattes Loup in 2005 in Courgis, taking over some of his family's vineyards, the young winemaker rejected established methods. He was convinced that before producing a great wine, the vineyard must be allowed to live. The soils were returned to working with horses or light tractors, synthetic treatments quickly disappeared, organic conversion began in the first years and was certified in 2009. This demanding approach is not a manifesto: it is simply the essential starting point for rediscovering the energy of the terroirs.
In Chablis, where the pursuit of yield and technical winemaking have long shaped the landscape, Thomas Pico chose an almost radical path. The grapes are harvested at full ripeness, fermentations start naturally thanks to indigenous yeasts, and aging extends far beyond the appellation's usual practices, on lees, in tanks, or in old barrels that never seek to mark the wines. Time becomes a true ingredient in winemaking.
This philosophy fully expresses itself on Chablis' Kimmeridgian soils. These calcareous marls, over one hundred and fifty million years old and studded with marine fossils, don't just provide a mineral signature. They offer a vibration, a salinity, and a depth that Thomas Pico seeks to reveal rather than to shape. His wines never aim for immediate impact; they open slowly, gain complexity with air, and unveil a substance of rare intensity, always carried by remarkable tension.
The estate now spans about fifteen hectares, divided between Chablis, several Premier Crus such as Beauregard or Côte de Jouan, and a few Grand Cru plots. Each climate is approached with the same humility: understanding what the vine has to say rather than imposing a style on it.
In twenty years, Thomas Pico has become one of the major figures of the new Burgundian generation. His bottles have profoundly changed the perception of Chablis among sommeliers and the finest restaurants in the world. They have reminded us that beyond the sole notion of freshness, Chablis can offer flesh, depth, and a formidable aging potential without ever losing that sensation of rock, chalk, and salt that defines its identity.
These wines tell exactly what we love to champion: winemakers who don't invent a style, but who reveal their terroir with enough patience and conviction to permanently change our perception of it.
