Three old plots of Pinot Noir give birth to Copin Pinot 2021, a Blanc de Noirs that reveals a particularly chiseled interpretation of Verzy Grand Cru. Here, the natural power of Pinot Noir recedes behind the precision of the terroir. The chalk guides the wine, bringing it a fine texture, mineral energy, and a remarkable sensation of verticality.

The initial nose reveals white flowers, citrus zest, and delicate orange peel. With aeration, notes of damp chalk, dried fruit, and a light brioche touch appear, enriching the whole without ever weighing down the wine.

On the palate, Copin Pinot 2021 impresses with its balance. The body is slender, profound, traversed by a saline tension that prolongs the finish durably. The dosage of only 1 g/L discreetly accompanies this architecture without ever masking the purity of the fruit or the expression of the terroir.

A highly precise Extra Brut Champagne, at once ethereal, mineral, and intensely gastronomic, which will pair equally well with scallops, roasted turbot, or aged Comté cheese.
