Les Hautes Sources Souris is a Blanc de Noirs from a single 16-are plot planted in 1990 in Beaunay. The vines are rooted in brown clay resting on a bed of limestone, a terroir where numerous underground springs circulate.
It is from this geological particularity that the cuvée takes its name. This constant presence of water helps preserve the freshness of the vineyard and imparts a very unique tension to the wine.
The 2021 base is complemented by the plot's perpetual reserve, then aged for eleven months in barrels on lees, without racking.
The nose opens with white flowers, fresh honey, and a discreet note of yellow fruits.
The palate is full, deeply saline, supported by a delicate texture and a remarkable sense of balance. The finish reveals a more indulgent expression, evoking candied fruits and citrus candies, without ever losing the freshness that characterizes the wine.
A subtle, ethereal, and particularly nuanced champagne, which reveals another interpretation of Pinot Noir in Beaunay.
