From vines aged 45 to 75 years, this Pouilly-Fuissé perfectly expresses Philippe Valette's vision.
Managed biodynamically, the vineyard is cultivated with minimal intervention to allow the terroir to express itself fully. Fermentations are carried out using indigenous yeasts, followed by a long aging of about thirty months in old barrels, without seeking a woody effect.
The nose reveals notes of yellow apple, mirabelle plum, candied lemon, quince, and honeysuckle. On the palate, the texture is ample and deep, immediately balanced by a chalky tension that extends the wine into a saline, zesty, and delicately bitter finish.
A great Burgundy Chardonnay, both generous, precise, and built for aging.
