With La Poire en Deux, Romain and Thomas Hénin leave the Champagne hillsides to seek fruit in Norman orchards. Plant de Blanc, Fossey, and Rouge Vigné: three perry pear varieties that here find an expression surprisingly close to their winemaking work.
The juices ferment naturally in barrels before a secondary fermentation in bottle and aging on laths in the cellars of Aÿ. No additives, no added sulfur: the Hénin brothers apply the same pursuit of precision and freedom to perry as they do to their Champagnes. The 2024 vintage was disgorged in October 2025 with an almost imperceptible dosage of 1 g/l.
The pear is there, clean, fresh, accompanied by floral notes and a fine effervescence. But it is above all the tension that surprises. The palate is dry, slender, with a slightly vinous texture and a lively finish that avoids any aromatic ease.
La Poire en Deux is less a detour into perry than another way for Romain and Thomas Hénin to let the fruit speak.
