Zé-Ro 2025

Zé-Ro 2025 perfectly embodies Thibaud Capellaro's vision: a syrah stripped of all superfluous elements, where the fruit, the terroir, and the winemaker's touch are enough to create the wine.

From old vines planted on clay-limestone soils, this cuvée is based on a vinification that is as simple as it is precise. The grapes are mostly whole-bunch fermented, while a small portion is pressed directly before co-fermentation. This subtle work gives the wine an ethereal texture, a discreet depth, and remarkable energy.

The nose opens with fresh blackberry, black cherry, violet, and black pepper, with a touch of garrigue that immediately recalls the landscapes of the Rhône. The palate is straight, juicy, and incredibly lively. The tannins are of great finesse, the body remains slender, and the freshness accompanies the wine to a long, spicy, and delicately saline finish.

At Thibaud Capellaro's, syrah never seeks power. It rather tells the story of the finesse of old vines, the precision of winemaking, and the immediate pleasure of the fruit.
