This is precisely Mathieu Deshautels' journey. After leaving Champagne to train in Burgundy, in the Jura, then in Australia and South Africa, he returned to his family lands with a perspective enriched by other landscapes, other wine cultures, and other ways of nurturing life.
Settled between Le Mesnil-sur-Oger and Cramant, in the heart of the Côte des Blancs, he is building an estate where every decision seeks to serve the identity of the grand crus rather than to standardize them. The vines are managed using organic and biodynamic agriculture, fermentations rely on indigenous yeasts, barrel aging favors precision over demonstration, while dosages remain deliberately discreet to preserve the terroir's expression.
His Champagnes are distinguished by their unique balance. The natural generosity of the great Chardonnays of the Côte des Blancs meets a chalky tension of great finesse, without ever becoming austere. The textures are deep, the balances remarkably precise, and each cuvée seems to seek lasting emotion rather than immediate impact.
Still under the radar, the estate is already attracting the interest of many enthusiasts and sommeliers who see Mathieu Deshautels as one of the most promising personalities of the new Champagne generation. His wines resolutely look to the future, without ever forgetting what makes Champagne great: a place's ability to reinvent itself without losing its identity.
