Cuvée du Professeur 2022

La Cuvée du Professeur originates from the Sous-Roche plot, a marl hillside that has been part of the family history of the estate. Where others would naturally have followed tradition, François chose "élevage ouillé" (topping up the barrels). Not to break free from tradition, but to explore the same terroir from a different angle.

The result is fascinating. The Savagnin retains all the depth imparted by the Château-Chalon marls, but it expresses itself with a different light. Candied citrus, ripe lemon, fresh almond, infusions, and spices appear in successive touches, without ever distracting from the essential: the tension that runs through the wine from start to finish.

The palate combines density and momentum with disconcerting ease. The more the body gains in amplitude, the more it seems to tighten around a precise, almost vertical axis. The wine moves in a single motion, carried by a vibrant freshness that long prolongs the sensation of rock and marl.
