Réserve des Célestins 2017

The Réserve des Célestins cuvée is probably the most powerful of Henri Bonneau's works. It is a selection of the best barrels, made only in great vintages. This explains why this cuvée is only found in certain years. The grapes are not destemmed, and vinification takes place in traditional concrete vats. Aging is divided between old foudres and French oak barrels, for 3 to 5 years. Extraordinarily deep and complex, it develops massive and generous aromas of smoke, pepper, and black and red fruits.
