A proponent of "non-intervention ," Jean-Claude Taddeï intervenes very little, ideally not at all, in the vineyards of his Aquila plot (0.5 ha) , planted in 2003. This small plot boasts a remarkable mineral richness , being composed of various rock types, including schist. At harvest time, the grapes undergo rigorous selection, and their juice is extracted gently and slowly using old cage presses. Fermentation and aging take place in barrels for 12 to 18 months.
Its lovely golden color immediately captivates us. Despite being recently bottled, the nose is already well-developed, delicate and floral . On the palate, it offers lovely fruitiness, with nectarine and a touch of apple. A subtle hint of linden blossom and a pleasant touch of bitterness emerge. The wine lingers, gaining volume and intensity ; its perfect acidity, balanced by a beautiful salinity, makes our mouths water and transports us.
