On the Les Courtes Échines plot, Sauvignon Blanc is rooted in soil where stone almost everywhere. An austere terroir in appearance, yet it gives birth to a wine of astonishing depth.
Pierre Précieuse opens with a ripe, almost tactile fruit, as if you were biting into a Sauvignon berry at harvest time. Then the wine changes register. The texture stretches out, the stone gradually takes over, bringing a saline sensation and an energy that long accompany the tasting.
After thirty-three months of aging, nothing seems ostentatious. Everything is in place. The texture, tension and time work in the same direction.
A great gastronomic white, at once ample, precise and deeply mineral, which will accompany roasted turbot, poultry with morels or an aged Crottin de Chavignol cheese equally well.
